How to Boil Water: Meyer Lemon and Dill Fish Parcels

So have you ever had one of those days where nothing went right? Well, that was my evening cooking tonight. We were all set to have the Meyer Lemon and Dill Fish Parcels. I started cooking it - and by starting I really mean that I cooked them. But the making progress went horribly wrong and after all was said and done, we didn't end up eating it after all. Pizza anyone? But I did make it, so I thought I would go ahead and share it with you guys, so here you go.

Ingredients:
4 (6-ounce) halibut fillets
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
8 (1/4-inch) Meyer lemon slices
1 tablespoon butter, quartered
4 teaspoons chopped fresh dill

Directions:
Preheat over to 375.

Cut 4 (15-inch) squares of parchment paper. Fold each square in half. Open folded parchment paper; place 1 fillet near fold on each square. Sprinkle fillets evenly with salt and pepper. Top evenly with lemon slices, butter quarters, and dill. Fold paper; seal edges with narrow folds. Place packets on a large baking sheet.

Bake at 375 for 15 minutes or until paper is puffy and lightly browned. Place 1 packet on each of 4 servings plates, and cut open. Serve immediately.



And as you already know the end result is pizza for dinner, but we tried it. It was the least  fishy fish that I had ever tasted and it wasn't bad. But there were a good amount of problems. First of all my pepper shaker - the one with the round fresh ground pepper - opened and all those little round balls went everywhere. And I mean e-v-e-r-y-w-h-e-r-e! Then as we are cleaning that up the package of dill fell to the floor. And as it turned out, the fish didn't seemed cooked all the way through, so not a good cooking day for me. It happens, right? Well, I'm going to go enjoy my pizza now.
