A Little Extra: Baked Veggie Chips

I needed a side dish to go with our Greek Salad Clubs. They are pretty much a stand alone meal because there is a whole lot of sandwich, and sometime I should definitely share that recipe because it is awesome (thanks for another great recipe, Rachael Ray!). But I always like to try to get a vegetable in with our meals. But I had no idea what to do with a sandwich that has so much, but also so light at the same time.

I had seem some recipes for veggie chips but I had never tried them. So finally I decided it was time to at least try to make some. But instead of searching the internet, I went straight to one of my favorite cookbooks.

From: Taste of Home Cookbook

Here's What You Need:
1/2 pound fresh beets (about 2 medium)
1 medium potato
1 medium sweet potato
1 medium parsnip
2 tablespoons canola oil
2 tablespoons grated Parmesan cheese
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
Dash pepper

Here's What You Do:
Peel vegetables and cut into 1/8-inch slices. Place in a large bowl; drizzle with oil. Combine the cheese, salt, garlic powder, oregano, and pepper; sprinkle over vegetables and toss to coat.

Arrange in a single layer in two ungreased 15x10-inch baking pans. Bake, uncovered, at 375 degrees for 15-20 minutes or until golden brown, turning once.






First of all I couldn't find beets in my grocery store, so there was strike one against this meal. I thought about adding in a carrot in, but I didn't have any of those at home and I wasn't about to run out to the store just for one or two carrots. So I did just a potato, a sweet potato, and 2 parsnips. The combination of cheese, salt, garlic power, oregano, and pepper was actually a really good and simple seasoning. But as with most things I try to take on like this recipe, it did not go as expected for whatever reason. I did exactly what the recipe said, including pulling both pans out to turn the chips over, which was not exactly a fun process. But yet quite a few of those chips turned out a mushy and not chip like at all, other than being cut to look like chips.

They weren't bad other than the fact that I didn't like any of the chips except for the potatoes. I wasn't a fan of the other flavors and tastes. But maybe I'll keep looking and find a recipe I do like. Even though I wasn't in love with this recipe, it was crazy easy to make so there's at least that!
