How to Boil Water: Blue Apron Month #1

In case you missed it, this month we started doing Blue Apron meals (read about it here). I have loved it. One week we skipped and I was actually bummed that week. I love trying new foods, especially things we normally wouldn't try. We have definitely found some surprises in the mix that we never expected we would actually love.

Spring Chicken Fettuccine with Sauteed Asparagus, Kale & Rosemary



This is closest to what I would normally make and pick out if I was looking for a new recipe. And surprisingly this isn't one of my favorites. It was good, but there were other meals we had so far that I like so much better.

Crispy Cod Tacos with Chipotle-Cabbage Slaw



This was my first time making cod and it wasn't fishy at all which was a nice surprise. The slaw was WAY too spicy for us but otherwise it was decent. I would definitely cut the spice level way down if we make this one again.

Greek Pizza with Kalamata Olives, Feta & Pea Tips



This is a favorite even with the olives and I really don't like olives. Rob was so-so on this pizza but I loved it. I would make this again in a heartbeat.

Roast Pork & Mashed Potato with Molasses-Stewed Greens



I'm not a fan of pork and that's pretty much my opinion still. It was fun to try making something new but not having this one again.

General Tso's Chicken with Sauteed Sugar Snap Peas & Jasmine Rice



I think this meal just became my new favorite ever. It was so good. I'm not sure we will ever order takeout Chinese again because this was ten times more delicious than anything we had ever ordered. It was so good and I can't wait to have it again!

Red Quinoa & Black Bean Enchiladas with Roasted Tomatillo Salsa Verde



I wasn't sure about this one when I made it. We had had quinoa before but I didn't remember it being all that delicious. Although it was definitely different it was actually pretty good.

Beef Tartines with Zucchini au Pistou



This one was another surprise. I was sure it wasn't going to have a lot of seasoning and just be bland. But it was actually full of flavor and really delicious. Rob told me he wanted this added to our favorites list.

Chicken Steam Buns with French Breakfast Radish & Cucumber Kimchi



If we are being honest, I fully expected to not like this one at all. It just looked weird and I had never had steam buns before. I was also afraid it was going to be too spicy but turns out it was really good. It was much better than I expected.

Spinach Pesto Gnocchi with Sauteed Asparagus & Brown Butter



This one wasn't one of our favorites. In fact, it was one of the ones I disliked the most. It was a little too salty for my taste which of course was a little bit my fault. But all around I wasn't a fan.

At first this was just a trial thing but for the time being we are going to stick with it every week. I love that we can try new things without me having to look for the recipes then find the ingredients. I love how easy it all is. I'm looking forward to another month of delicious, new foods!
