How to Boil Water: Blue Apron Month #2

We had another delicious month of Blue Apron meals. We had some meals we liked more than others. Some we would have again and others we won't, but overall it was all good.

Chicken Piccata with Fusilli Pasta & Garlic Chives



We have had chicken piccatta before but never anything with this much flavor. It was so delicious. The pasta was kind of crazy looking but it was really good. There was just so much flavor and all of it was delicious. This was one of my favorites from the month.

Lemon-Butter Salmon with Creamy Barley & Zucchini Salad



I am not a salmon fan - or a fish fan in general actually. But we wanted to try some fish recipes with Blue Apron. In general this meal wasn't bad and wasn't fishy at all if I didn't eat the skin (which eating the skin is a little creepy anyway for me). I'm glad we tried it but we probably won't eat this again.

Muffletta-Style Grilled Cheese Sandwiches with Baby Romaine & Pistachio Salad



This is basically fancy grilled cheese but it was good. It was a little oily for us because instead of using butter on the bread, you use oil in the pan. So if/when we have this again I'll be using butter to fix the oily problem. But this was actually really good. The salad that went with it was okay but there wasn't much to it.

Huveos Rancheros Quesadillas with Tomatillo Salsa & Sunny Side-Up Eggs



I wasn't sure about this one but it was pretty good. I had a little trouble cooking the egg - not my stronger skill - but they turned out pretty good. The mix of all the flavors were surprising together and actually really good. It was also very filling with so much going on.

Spicy Miso-Glazed Chicken Wings with Purple Rice & Zucchini Salad



This was delicious. I want to make more and more of these. I don't think anyone else in the fam was a fan but I loved them. I'm definitely looking forward to having these again.

Seared Pork Chops & Fig Compote with Sauteed Kale & Farro Salad



I wasn't a fan of this meal. This really was the first one that I didn't finish and didn't enjoy. I might be staying away from the pork meals for awhile. It just wasn't my thing.

Maryland-Style Cod Cake Sandwiches with Tarter Sauce & Red Cabbage Slaw



This wasn't horrible but it definitely had a kick to it. I wish I had put less spice in it, but overall it wasn't horrible. I've had crab cakes but never cod cakes. The only problem really was that it was a little spicy but it was easy to make and it was the first time I had never kept one together without completely coming apart so there's that at least.

Mushroom & Potato Pizza with Fontina Cheese, Spinach, and Garlic Oil



This one was a bit of a surprise. I was really expecting it to taste really weird because potatoes on a pizza is really odd. But it wasn't nearly as bad as I was expecting. It was even pretty good. We probably won't have it again since we are more traditional when it comes to pizza but it was interesting to try.

Peruvian Roast Chicken & Potatoes with Green Beans & Creamy Jalapeno Sauce



This was actually pretty good. We really liked this one. I liked the potatoes a lot and will definitely be doing those again. The chicken was also really good. We liked it including the creamy jalapeno sauce. I only put very very little in there. It was enough to get the taste but for it not be spicy at all. We really liked this one a lot.

Crispy Catfish & Parsley Mashed Potatoes with Spicy Cajun Slaw



I have convinced that I still don't like catfish. I haven't it in years. It wasn't as bad as I remembered catfish to be but I'm still not a fan. It's a very fishy fish and just not my thing. The rest of the meal was pretty good but I didn't care for the catfish.

Seared Steak & Spiced Potato with Sauteed Snap Peas & Tarragon-Labneh Sauce



This one was good. And I'm pleased that this was the best I have ever cooked steak. We have already figured out that we really like potatoes cooked like this so yum. The sauce was definitely heavy on the vinegar but it was all still delicious.

Spicy Hoisin Turkey Meatballs with Sauteed Zucchini & Brown Rice


These weren't too bad. The hubs was a big fan. I liked them but they weren't my favorite meal we've had. I didn't go overly crazy with the spice because spicy is in the name and we aren't crazy about too much spicy. Overall this was good. We enjoyed this one.
