How to Boil Water: Blue Apron Month #3

Another month has passed which means another month of Blue Apron meals are behind us which means another How to Boil Water Blue Apron update!

Zucchini & Cherry Tomato Quiches with Tomato-Arugula Salad



This one was really good and really easy. It took some time to do prep work, but it mostly did its thing in the oven so it was pretty easy all around. It was good. It was a lot more food than I was expecting and it filled me up pretty quickly but it was really good. I would definitely do this one again.

Crispy Cod & Summer Squash with Quinoa & Arugula Salad



Not a favorite. I still don't really care of fish and it was weird to eat. It was pretty flavorful but it just wasn't all that great in my book. It's not the worst but it's also not the best for me.

Za'atar Chicken Burgers & Oven Fries with Feta-Labneh Spread & Garlic Chips



This was pretty good. I wasn't sure what to expect from this because I had no idea what most of these things were. But it turned out to be really delicious. The chicken puffed up quite a bit more than I was expecting when I cooked them but otherwise it was delicious. The oven fries were seriously good. That was best oven fries I have ever made and we will be repeating that fry recipe again and again.

Lemon Chicken & Green Beans with Parmesan-Roasted Summer Squash & Potato



This is one I was excited about because I was sure it was going to be delicious and honestly it looked delicious. But I undercooked the chicken so the meal was a bit of a disaster. What started out as a chicken meal ended up just being a vegetable meal. The vegetables were definitely delicious so it was a big bummer about the chicken. So I think I will try this one again and do better on the chicken.



Serrano Pepper & Goat Cheese Burgers with Zucchini-Cilantro Slaw



These were pretty much just fancy hamburgers but they were delicious. Those green things on top were spicy peppers which definitely gave a kick to the meal but it wasn't terrible if you had it with the goat cheese. I think I liked it more than Rob - to him it was just a fancy hamburger which it was but it was good.

Sweet Corn & Tinkerbell Pepper Pizza with Fontina Cheese & Baby Kale



This one wasn't as bad as I thought it was going to be. In fact I will even go as far as to say good. It's not going to be something we will have again because I'm a big fan of the traditional pizza but it wasn't too bad. It definitely wasn't as bad as I thought it was going to be.

Beef Albondigas with Sauteed Summer Squash & Pan Con Tomate



This wasn't bad but I wouldn't exactly call it great either. It was a mixed bag for me. I loved the bread and the squash but the meatballs were only so-so for me.

Chicken & Buttermilk Biscuit Sandwiches with Shredded Collard Green & Carrot Slaw



This was super salty. I have no idea what happened but it was very very salty and a bit of a killer on the taste buds. At least I didn't have a problem cooking the chicken this time. The biscuit also fell apart on me when I cut them open so I don't know if it was in the making of them or the cooking time but this didn't turn out all that great. It's hard to say exactly how it was because it was so dang salty.

Fresh Basil Fettuccine with Sauteed Cherry Tomatoes & Zucchini



This is seriously delicious. Yes in case you were wondering that's fresh pasta. It was so good and something that I would make all the time. I'm going to have to learn how to make fresh pasta because yum!
