How to Boil Water: Blue Apron Month #5

Late-Summer Fregola Sarda Pasta with Romano Beans Ricotta & Crispy Capers



The flavors were pretty good in this one but the textures were weird. I haven't had a lot of fresh oregano either so that was a little stronger than I was expecting. It wasn't bad overall but I just couldn't get past the textures.

Summer Vegetable & Queso Tostadas with Fairy Tale Eggplants & Spicy Crema



I actually really liked this one if I took the Queso out of it (those are the big chucks of cheese by the way). I really didn't like the taste or texture of that but otherwise this was really good.

Sweet Pepper, Zucchini & Corn Stir-Fry with Soba Noodles & Ginger Cashews



This one was pretty good. The flavors were really good with this one although it did have a bit of a kick to it. Of all the meals for that week, it was definitely my favorite. It was a bit of a rough week of meals but it was all new things that we were able to try. It was definitely things we would never have tried otherwise so there's at least something to that.

BBQ Sloppy Joes with Green Beans & Tomato Salad



These were pretty good. I know some people on the Blue Apron site were less than thrilled that Sloppy Joes were on the menu but these were good. I'm even going to say that I'm starting to like BBQ sauce which I have never liked before. I'm coming around to it. These were definitely simple but they were good.

Spicy Hoisin Chicken Stir-Fry with Baby Bok Choy & Sesame-Ginger Cucumber Salad



Rob liked these well enough but I just couldn't get on board. It wasn't that it was bad but I just wasn't a fan of the flavors in general. This was my first time I had ever had Bok Choy. It was interesting. I do have to say that my favorite kind of rice now is Jasmine rice which once again we had with this meal.

Sweet Corn Ditali Pasta with Cherry Tomatoes, Jalapeno & Ricotta Cheese



I really liked this one. It was simple but it was delicious. Pasta is rarely bad for me. It was a different kind of pasta and I love corn so there was no bad here. It had a bit of a kick with the Jalapeno but it was leveled out with the Ricotta cheese. I thought this meal was good.

Fairy Tale Eggplant & Spinach Flatbreads with Warm Green & Tomato Salad



This one was disappointing. I kind of knew that a flatbread type thing with spinach and eggplant was going to be weird but in this case it was just disappointing. It just was a little lacking on flavors. Maybe it's on me because I didn't season enough but it just wasn't great. If you got a bite that included cheese then it was definitely much better.

Summer Pepper & Potato Shakshuka with Pea Shoots & Spiced Pita Chips



This one was hardy and delicious. And those pita chips were amazing! They were seriously good! There really wasn't anything good about this meal and neither me nor Rob had any problems with any aspect of this meal.

Summer Udon Noodle Salad with Cherry Tomatoes, Corn & Summer Sweet Pepper



This one was also really good. I would have been good without the baby kale but otherwise this meal was really good. Those noodles were amazing good.

Brown Butter & Thyme Gnocchi with Maiitake Mushrooms, Corn & Swiss Chard



Yum! I don't know what else to say about this! Pasta, cheese and corn are all in this recipe so there's basically no wrong!

Roasted Eggplant Pitas with Tomato, Cucumber & Farro Salad



Truthfully I could never really figure out if I liked this one or not. Some bites I was sold on it and other bites I was less sure. I'm not even sure what made me like it sometimes and not like it other times. I do know the tomatos are good. Whoever is growing those cherry tomatoes I keep getting is doing an awesome job because they are so good!

Spiced Cauliflower with Jasmine Rice & Cilantro-Yogurt Sauce



I actually expected to hate this one, but much to my surprise I didn't. It wasn't as bad as it initially looked which was definitely a pleasant surprise. I won't be making this meal again but I'm glad I at least tried it.

Broccoli & Spinach Stromboli with Fennel-Bell Pepper Salad & Tomato Dipping Sauce


What I really learned from this one is that I am horrible with pizza dough. I am bad at getting it stretched out the way it should have been. I got it good enough though and managed to get the broccoli and spinach in it and wrapped. However it was definitely thicker on one end than the other which meant it wasn't exactly cooked even. The fennel and pepper salad wasn't great though. I don't really like pepper as it turns out. This wasn't awful but it was a little lacking on flavor, so I definitely liked it dipped in the tomato sauce. I was definitely so-so on this one.

Fontina & Leek Grilled Cheese Sandwiches with Romaine, Cucumber & Radish Salad


Holy heck, this was delicious! I'm not a fan of grilled cheese but I would have this one many many times. It was seriously good. Wasn't a fan of the salad but that sandwich was all kinds of good. So yes this will be a repeat!

Thai Red Curry & Rice with Shokichi Squash & Eggplant



Yeah there are all kinds of nopes about this meal. I like the Jasmine Rice but otherwise there is nothing I liked about this meal. I learned that curry isn't my thing. I really didn't like this one at all.
