How to Boil Water: Slow Cooker Greek Chicken Gyros with Tzatziki

So I have decided to do a slow cooker version of HtBW this winter with ours wins and not so much because who doesn't love slow cooker meals? They are just awesome and make life so much easier. My favorite time to have them is on the weekend when I just don't want to cook. I want to relax and chill and not spend a ton of time in the kitchen cooking and cleaning.

Here's What You Need:
2 lb boneless, skinless chicken breast
1 onion, chopped
2 cloves garlic, minced
1 tsp dried oregano
Salt  & pepper
3 tbsp olive oil
1 tbsp red wine vinegar
Juice of 1/2 medium lemon
1/3 cup water

-Tzatziki Sauce-
2 cups plain Greek yogurt
1 cucumber, finely grated
2-3 cloves garlic, minced
1 tbsp white wine vinegar
1 tsp dried dill weed
1 tsp dried oregano
Salt and pepper, to taste
Juice of 1/2 medium lemon
1 tbsp olive oil

-Options for servings-
Warm pita bread
red onion
red pepper
romaine lettuce
cucumber, diced
sliced tomatoes

Here's What You Do:
Spray a slow cooker with cooking spray. Add the chicken to the slow cooker. In a small bowl, combine onion, garlic, oregano, salt, pepper, olive oil, red wine vinegar, lemon juice, and water. Pour over chicken. Cook on low for 6-8 hours or high for 4-6.

To make sauce: In a medium bowl combine Greek yogurt, cucumber, garlic, white wine vinegar, dried dill weed, dried oregano. Salt and pepper to taste and add lemon juice and drizzle olive oil on top. Refrigerate for 30 minutes to let the flavors blend.

Prepare chicken on warm Greek pita bread with desired veggies and sauce on top.

Who doesn't love slow cooker meals?! I'm definitely a fan. However I've had some issues finding good ones that we want to have again. I was really hopeful about this one being a good one.

Basically we had mixed feelings about this one. Addison and Rob liked it. I so-so liked it. I wasn't a fan of the tzatziki. Greek yogurt just doesn't sit well with me. Plus it didn't help that the pita bread just fell apart - thanks HyVee for your terribly made homemade pita bread. It was basically impossible to even load the pita up all the way because it did just flake apart. It was sad.

I'm not sure if this was one we will try again. It might be better if we were able to load it with more chicken and veggies and less sauce, but all on a stronger pita bread.
