How to Boil Water: Cheesy Avocado Quesadillas

So the other day I had a hankering for quesadillas. No clue why. I also really wanted to tacos and the best tacos I have ever had was in Orange Beach at Chronic Tacos. Since we don't have one of those, I went with quesadillas because it just seems easier and I couldn't find the taco recipe I wanted to try. So using that trusty Pinterest (follow me here), I found this recipe.

Dinner is Bought To You By: Damn Delicious

Here's What You Need:
1 tbsp olive oil
1 lb ground beef
1 tbsp Old El Paso taco seasoning mix
1 can (4.5 oz) Old El Paso chopped green chiles, drained
8 (8-inch) tortillas for burritos
1 (16 oz) can Old El Paso refried beans, heated
2 avocado, peeled, halved, seeded and sliced
2 cups shredded mozzarella cheese
2 tbsp chopped fresh cilantro leaves

Here's What You Do:
 Preheat oven to 400°. Line a baking sheet with parchment paper.

Heat olive oil in a medium skillet over medium high heat. Add ground beef and cook until browned, about 3-5 minutes, making sure to crumble the beef as it cooks. Drain excess fat and stir in taco seasoning and green chiles; set aside.

Top tortillas with refried beans, ground beef mixture, avocado and mozzarella, and then top with another tortilla. Repeat with remaining tortillas to make 4 quesadillas.

Place quesadillas onto prepared baking sheet. Place into oven and bake until cheese has melted, about 8-10 minutes.

Serve immediately, garnished with cilantro, if desired.












There was a couple of differences we had that wasn't in the original recipes. First instead of using a tablespoon of the taco seasoning, I used the whole package. Maybe that was a tablespoon, maybe not. I didn't actually realize there was even an measurement on this ingredient until I was just typing it up above. So there's there. We also had less green chiles than called for because as I was draining - since I don't have a small strainer, I opened the lid then pushed down to drain - I ended up spilling half the chiles in the sink. Definitely didn't mean to do that but oh well. That wasn't a huge deal since I would have preferred going light on the green chiles anyway.

The next difference was two shopping errors which was done by the hubs, although it was my fault for not writing down specifics to what I wanted. Turns out he can't read my mind....

Anyway, I didn't write down the size of the can of refried beans I needed so the man bought a 31 oz can, although I'm not sure why he thought we needed so much. So a lot went to waste. Along the same lines, I didn't write down the size of the tortilla so he got the biggest size so I only ended up making two quesadillas total because that was more than plenty. But both of those things didn't impact anything really.

So my first impressions and feelings about this was definitely delicious. It had a mix of flavors and I loved how the avocado cooled everything down and even though once upon a time I wouldn't have said this, I will now confirm that I do like the taste of avocados. Yum!

I loved how easy this meal was and made plenty of food for us. This is definitely going into our favorites because it was just good and we all enjoyed it!
