How to Boil Water: Month #9 + A Decision

Spaghetti Squash Marinara with Mushrooms & Garlic Knots



This was really good. It took awhile to make and cutting through squash was hard but it was delicious. The garlic knots had too much garlic (silly I know).

Roasted Cauliflower Pitas with Feta Cheese & Yogurt



I expected this to be not so great but turns out it was pretty good. I'm not a cauliflower fan but roasted gave it a whole new taste. The yogurt sauce was a bit spicy with the pepper. I barely put any in but when you eat it with the roasted vegetables it had a whole new taste and toned it down. We really liked this one much to our surprise.

Potato & Artichoke Quiches with Romaine & Orange Salad



I was definitely not a fan. The potato was good but that was about it. Turns out that I am not a fan of artichokes. And the salad was lacking. The orange just wasn't awesome. I only ate about a 1/3 because I just couldn't get around the texture or taste.

Bucatini Pasta Bolognese with Brussels Sprouts



The hubs liked this one but it was only so-so for me. I have never been a huge brussel sprout fan and this dish was very meaty. I tend to like my pasta very saucy and not so heavy with the meat. So although I'm always a fan of pasta, this was not a favorite.

Fresh Fettuccine with Beet, Goat Cheese & Poppy Seeds



This one was delicious. Fresh pasta is always really good. Although it was a bit unusual and the pasta was red from the beet which was different, it was really good. Rob and I liked it. Addie refused to eat it and Connor was a fan.


So now to the decision --

After nine months and countless meals we have decided to take a break from Blue Apron. I'm not canceling our service just currently skipping meals unless we find a week that we just can't pass up and printing out the random recipes here and there that we want to try.

This decision comes from the fact that in the last couple weeks I have had more stress and problems cooking the Blue Apron meals than not. Lately it's been hard to get Addison to even try the Blue Apron meals not to mention the fact that Connor is now eating table foods as well.

Between my knee surgery and struggling to get around and keep up and two very active kids - one of which just discovered how to go up the stairs but not down - I have struggling and stressing about dinner. And that is one thing that I'm tired of stressing about. I'm tired of ruining dinners because I have to chase a kid or with my scattered mind I ruin dinner without a kid's help. So I need some more basic meals. I need to feel more relax when I cooking - if that's even possible - and I need simple for awhile.

I started doing Blue Apron as way to get excited about cooking but now we are skipping our Blue Apron meals for awhile, and now I'm excited about cooking again. I'm excited to find the easy meals that the whole family will eat. I'm ready to find meals that don't stress me out and meals that won't drive me up the wall fighting the kids to get them to eat.

So you won't be seeing any more Blue Apron HtBW posts for awhile, but you might be seeing more new recipe posts as we try some new things of my own finding again.
