How to Boil Water: Slow Cooker Chicken & Dumplings

So I have learned something important about being a wife and mom. You listening? Turns out they all want to eat every night! I know, right?! Who's with me at being completely outraged by that?!

Okay so not a great surprise but as the cook of the family I get tired of cooking. So one of my favorite things I own is the slow cooker. I mean seriously how easy is it to stick everything in and let it do its thing all day. That's exactly what I did once again which turned out to be a life saver on the day we had this meal because my knee was killing me that day.

Here's What You Need:
4 boneless, skinless chicken breast halves
1/4 tsp poulty seasoning
1/4 tsp paprika
1/4 tsp pepper
2 cans (10.5 oz each) condensed cream of chicken soup, undiluted
1 can (14.5 oz) chicken broth
1 soup can water
2 tubes (10 oz each) refrigerated biscuit dough, torn into pieces
Chopped parsley, for servings (optional)

Here's What You Do:
Place the chicken in a slow cooker. Sprinkle with poultry seasoning, paprika, and pepper.

In a medium bowl, whisk together the 2 cans of soup, chicken broth, and water; pour the mixture over the chicken in the slow cooker

Cover and cook for 5-6 hours on HIGH.

About 90 minutes before serving, remove the chicken from the slow cooker and roughly chop into pieces. Return the chicken to the slow cooker. Add the torn biscuit dough, pressing down gently to make sure they are all submerged. Cook until the dough is no longer raw in the center.

To serve, sprinkle with chopped parsley.









We haven't had a lot of luck withe slow cooker meals lately. We have had a lot more duds than successes. But this one was delicious. Granted there wasn't exactly a lot to this meal with basically just chicken and biscuits. But that doesn't mean it's going to be good. This was good. We really enjoyed this meal. Connor even inhaled this meal.

I did find I had a small problem when I started gathering what I needed for this meal - I had no poultry seasoning! So I ended up putting together my own mix - that's the beauty of the internet, you can find how to make your own poultry seasoning at the drop of a hat. So in case you don't have any poultry seasoning and want to make this meal:

2 tsp ground dried sage
1 1/2 tsp ground dried thyme
1 tsp ground dried marjoram
3/4 tsp ground dried rosemary
1/2 tsp ground nutmeg
1/2 tsp finely ground black pepper

If you look close at the pictures you can actually see the flakes of the seasoning and that's because as it turns out I don't have most of my spices ground. But it still worked.

The other thing I realized way after the fact is that the slow cooker was supposed to be on high and I had it on low. Everything was cooked through so I don't know if it would have made a difference in the long run.

But like I said it was all good in the end. The hubs and I both had second helpings. Connor down his helping happily (I also think that's just because he's happy to finally be getting table food - that boy is always hungry!). I would definitely recommend this meal as a warm, quick and easy meal. Maybe it's not all the healthy in light of the fact that there was a whole lot of biscuits in this meal but it had protein too so that's makes it all good.
