How to Boil Water: Avocado Black Bean Quesadillas

Why yes this is yet another quesadilla recipe but seriously they are delicious and easy so how can you get much better? I will admit that once upon a time I might not have like quesadillas so much but my tastes have changed and I have really come around to them which is why I keep posting recipes because if you have something good, why not share?!

Dinner Brought To You By: Gimme Delicious

Here's What You Need:
1/2 onion, chopped
1/2 bell pepper, chopped
1 tbsp olive oil
1/2 cup black beans, drained
1 tbsp taco seasoning
4 medium soft flour tortillas
2 avocados, peeled, halved, seeded and sliced
1/4 cup cilantro, minced
1 lime, cut in half
1 cup Mexican cheese
Oil or cooking spray for cooking

Here's What You Do:
In a medium pan over medium-high heat, saute onion and bell pepper in 1 tbsp olive oil for 2-3 minutes or until tender. Add the black beans and taco seasoning. Cook for another minute. Transfer mixture into a small bowl and set aside.

Rinse and wipe down pan and return to heat. Drizzle with a light layer of oil or spray with cooking spray.

In a small bowl, lightly mash the avocados with a fork. Stir in cilantro and juice of 1/2 lime, season with salt and pepper to taste.

Spread a quarter of mashed avocado onto half of a tortilla. Top with bean mixture and 1/4 cup of cheese. Fold the tortilla closed over the veggies. Repeat with all tortillas are filled and all fillings are used.

Cook on medium-high heat for 2-3 minutes per side or until the outside is crispy and cheese has fully melted. Serve with your favorite salsa or sour cream.

















 This one was really delicious. Everyone is the family was pretty much in agreement on this one - we all love this quesadilla recipe. I loved it even more because it was so easy to make. There really just wasn't much to it but that doesn't mean it wasn't delicious because it definitely was. Sometimes it's the simplest meals that become favorites.
