Here's What You Need:
1 cup butter, softened
2 cups sugar
1 tsp vanilla extract
2 cup unsweetened applesauce
4 cup all-purpose flour
2 tsp. baking soda
1 tsp. ground cinnamon
1 tsp. allspice
1/2 tsp. ground cloves
1 cup chopped walnuts
Here's What You Do:
In a mixing bowl, cream butter and sugar. Add eggs and vanilla extract; mix well. Stir in applesauce.
In a separate bowl, combine flour, baking soda, cinnamon, allspice, and cloves. Stir into sugar mixture until just combined. Fold in walnuts.
Spray cups of two muffin baking pans with non-stick cooking spray. Divide batter evenly between 24 muffin cups, filling each about 3/4 full.
Bake at 350° for 25 minutes or until a wooden pick inserted in the center comes out clean.
Let stand in baking pan 5 minutes. Remove muffins from pan and place on a wire rack to cool. Serve warm or room temperature.
Makes 24 muffins. Applesauce muffins freeze well.
This one went over well here at home and at Rob's work. This made 24 muffins which is way more than we could eat so I sent some with Rob to his work. Apparently they went over well and all around delicious. Both kids ate them up and as a bonus used up the rest of the unsweetened applesauce I had hanging around in my fridge.
Of course now we have moved on to waffles - and I'm not going to lie, it's the frozen variety - but these muffins are delicious. I definitely recommend giving these a try if you want some delicious muffins.
