How to Boil Water: Blue Apron #11

Fusilli Bucati Pasta w/ Summer Squash, Corn & Tomatoes



This was pretty good and super simple. And these days I love simple. Although I don't think I let the tomato juice work enough because it was a bit bland and I'm thinking I was suppose to have more tomato flavor to it. But it was still good and we definitely enjoyed this meal. And I think the kids liked it because the pasta looked like springs. Although in all fairness Connor didn't eat much but we are going through a picky eating phase so I wouldn't judge anything off him. But like I said it was good and easy so I'll take it.

Fontina Cheeseburgers with Cilantro & Tomato Salad



The salad that went with this wasn't all that awesome but this burger was delicious! It was hands down the best burger I have ever made. It was simple and it stayed together (I'm terrible at making a burger that doesn't just fall apart - a weird problem but one I can't seem to figure out). I don't know what to say about this other than it was delicious.

Summer Vegetable & Egg Paninis with Chile Mayonnaise & Tomato-Mozzarella Salad



This meal was a bust for me. Rob was definitely a fan just of the mozzarella & tomato salad alone because cheese. I wasn't crazy about it for some reason. The sandwich was pretty much a no-go from the get-go because there is egg in it. I haven't been such a fan of egg since my pregnancy with Connor. I also accidentally cracked on of the eggs as I was putting it in the pot to hard-boil so one of the egg didn't turn out awesome and was blah. So this one just wasn't great for me, although Rob liked it.

Sesame Beef Lo Mein with Bok Choy & Shishito Peppers



Looking at this picture now, this meal actually looks dry. It wasn't overly dry to eat and wasn't bad. It wasn't a favorite by any means and wasn't one that we would be making again just on our own but it wasn't bad. It definitely had a kick to it with the shishito peppers so that wasn't so awesome. I had to be careful to keep the peppers off the kids's plates because they definitely had a kick. Overall this meal wasn't bad especially once the lime was added, just not our favorite.

Seared Steaks & Roasted Potatoes with Balsamic-Glazed Mushrooms



This one was a bit disappointing because I didn't quite cook the steak the medium-rare like we like. It was just a bit more rare than we care for, so we really had to pick and choose the pieces. The potatoes were seriously delicious. I'm not a huge fan of kale but it wasn't bad although it had a bit of a kick for some reason. The mushrooms were good despite the balsamic glaze (balsamic isn't my favorite flavor). Rob loved the steak and ate as much as he felt comfortable with. We are just not rare steak eaters I guess.

Basil Pesto Spaghettini with Corn & Tomatoes



So this was pretty good. It was super simple. The recipe said it takes 25-35 minutes but it took me way less time than that, so not sure what that was about. But it was super easy so I'll take that any day of the week. I wasn't sure how I was going to feel about this meal since this it had pesto in it and I'm not a huge fan of pesto. But this was a simple and good meal. I do love myself some corn though so that was always a strike in the good column. Overall this was a good meal.

Spicy Chicken Sandwiches with Napa Cabbage Slaw & Roasted Potato Wedges



For someone who has had a major aversion to chicken breast since being pregnant with Connor, this wasn't horrible. But I actually did a decent job cooking it so it wasn't overly dry - thank goodness because dry chicken breast is the worst! I will admit that this wasn't exactly spicy because we don't do a lot of spicy stuff and I don't care of it so I made it a bit more mild. All around this meal was pretty decent. It was definitely a decent size sandwich and I didn't even finish mine because there was just so much. But it was pretty good overall!
