Meal Prep Monday: General Tso's Chicken + Sugar Snap Peas + Jasmine Rice

I'm going to start this one by saying that I have made this before but only I have done it as a dinner. It was delicious as a dinner but it worked just as perfectly as a meal prep lunch for the week as well.

Here's What You Need
1 lb chicken thighs, cut into 1-inch chunks
1/4 cup cornstarch
Oil for frying
1 tbsp minced ginger
1/2 tsp red chili flakes
2 cloves garlic, minced
--For the sauce--
3 tbsp rice vinegar
3 tbsp soy sauce
2 tsp hoisin sauce
1/4 cup water
3 tbsp sugar
1 tbsp cornstarch

Here's What You Do
Toss the chicken thighs with a quarter cup of cornstarch and let sit while mixing sauce ingredients.

Add the rice vinegar, soy sauce, hoisin sauce, water, sugar and tbsp of cornstarch in a small bowl and whisk together.

Add the chicken to the pan with the oil and fry until crispy.

Drain all but a tbsp of oil and add the chili flakes, ginger and garlic. Cook until you can small garlic about 30 seconds).

Add the chicken and toss then add the sauce. Stir for about 30 seconds until thickened.

Also
I used a pound of snap peas that I sauteed until bright green with just some salt and pepper. The Jasmine Rice I cooked with 1 3/4 cup of water (1 cup rice) for about 15 minutes.









I made a couple of mistakes with this one that I think I would definitely do differently if I made this again for meal prep. For one I would cook the sugar snap peas in butter instead of oil because butter - yum. The rice I love as is so I'm good there.

Firstly I don't recommend making the chicken the way I did because quite frankly I put too much into the pan at once so it didn't fry well. I definitely need to do it in batches but I was trying to do this quickly and that was a mistake. The sauce was good but I think I'm still having cornstarch issues because it really didn't get very thick and was way too loose. So again I think I need to get new cornstarch.

Otherwise this meal was good. I just heated it up for about a minute and a half in the microwave and it was a good meal all week. It was pretty easy to make too. I definitely recommend this one.
